Recipe: Homemade Chipotle Copycat Rice (Cilantro and Lime Rice)

Chipotle, I love you and this doesn’t mean I want to visit you less. But if I can make your delicious lime and cilantro rice at home and save money, it must be done.

The best thing about Chipotle’s rice and chips are how deliciously lime-y they are. It goes perfectly with the meats and veggies to brighten up the flavor. Luckily, there are lots of recipes and videos cropping up on making Chipotle rice at home so that you can get your healthy carbs in while saving money.

Here’s how I made it:

Stable & Spice Chipotle-Style Rice

2 cups long-grain rice or basmati rice
2 bay leaves
2 tablespoons lime juice
2 tablespoons lemon juice
3 tablespoons finely chopped cilantro
a drizzle of olive oil

  1. Cook the rice according to package instructions. If using basmati rice, you’ll need to use a LOT of water. Once the water is boiling and you’re adding in your dry rice, also add in a drizzle of olive oil, your 2 bay leaves, and a heavy pinch of salt.
  2. If you used basmati rice: Once the rice has cooked, use a fine mesh strainer and rinse the rice with hot water. Remove bay leaves. If you used long-grain rice, find the bay leaves and remove.
  3. Stir in your citrus (lime and lemon juices) and your chopped cilantro. Season with another 1/4 tsp. salt, or to taste.
  4. Serve hot. Top with chicken, veggies, salsa, or whatever topping you choose!
