The Iced Coffee Banana Smoothie
If you’re riding or working out early in the morning, this recipe is for you. This combines two of my favorite breakfast items: fruit and, of course, coffee. Add in some protein powder and coconut milk for a healthy fat, and you’re fully fueled!
I’ve made this for my family and boyfriend and everyone that has had it, loves it! It tastes like a sweet mocha drink – one of the fancy ones you get at coffee shops – but it’s natural, healthy, and not full of sugar that will lead to a crash after a couple of hours.
The Stable and Spice Coffee Banana Smoothie
1/2 cup brewed coffee, chilled (I just save extra coffee that I didn’t finish the morning before)
1 medium banana, sliced and frozen (it doesn’t take long for these to freeze – about 30 minutes and they’re good to go).
1/2 cup coconut milk. Don’t use light coconut milk, or it will become too watery!
1-2 Tbsp protein powder. If you have a protein powder you like that isn’t too strong in taste, this will keep you full and fueled for longer. You could also add 1 tbsp peanut or almond butter.
1 drop vanilla extract (optional)
Honey or stevia if you like it sweeter (optional)
A few ice cubes
You can play around with these amounts until the drink is the right consistency for you. Blend and enjoy!
