Yum: Sweet Potato Pizza Crust
You’re probably thinking, “Sweet potato? Really?”
And I’m saying, “YES! This will most likely be the best idea of your week!”
Not only are sweet potatoes high in Vitamin A (good for your vision and seeing those distances) and Potassium (goodbye inner thigh Charlie Horse), but they are a better starch for you than regular potatoes or pizza crust.
Ingredients
2-3 medium sweet potatoes (enough to yield 1 cup mashed)
1 ½ Cup Old fashioned oats
1 teaspoon baking soda
1 Tablespoon Italian Seasoning
1 teaspoon salt
½ cup pizza sauce of your choice
½ cup mozzarella cheese
Toppings of your choice (I would stick with no more than three toppings)
Parchment paper
Directions:
Preheat oven to 400 degrees Fahrenheit and set a medium pot of water to boil.
Peel and cut sweet potatoes into 1 inch by 1 inch cubes and add to boiling water. Let boil for 12-15 minutes or until you can easily spear the cubes with a fork. Drain potatoes and place in medium bowl. Mash potatoes until smooth. Measure out 1 cup mashed sweet potatoes into a large bowl.
Place 1 ½ cup old fashioned oats in a blender or food processor and pulse/blend until fine (20-30 seconds). Add the processed oats into the mashed potatoes. Add baking soda, salt, and seasoning.
Mix the dough until blended then form the dough into an orange ball.
Line a pizza or baking sheet with parchment paper. Press dough onto parchment paper into a circle. You’ll want the dough to be no more than ½ inch thick for best results.
Bake the dough in the pre-heated oven for 15-20 minutes or until the edges are slightly brown.
Remove your pizza crust from the oven and put your sauce and toppings on. Place back in oven and broil on high 3-5 minutes or until the cheese is melted.
Note: You can also bake these then freeze them for snappy weeknight meals or lunches.
