It can be tough to find the time to cook a healthy meal with good quality ingredients – especially after squeezing in time to ride. At least one night a week, I need a short cut meal. Something that requires as  little actual cooking as possible so that I can pull a meal together in just a few minutes. Instead of stopping by a fast food place or choosing to eat out, I like to grab a whole rotisserie chicken from the grocery store to serve as the base of my short cut meal.
